Tuna Salad with White Beans

Ingredients
One (5-ounce) can good-quality tuna packed in olive oil (drained)
One (15-ounce) can cannellini beans (drained and rinsed)
1/4 small (about 3 oz) red onion (thinly sliced into half circles)
Kosher salt
Freshly ground black pepper
1 to 2 tablespoons extra-virgin olive oil
2 to 4 tablespoons chopped fresh flat-leaf parsley
Handful of halved cherry tomatoes (optional)
Juice from 1/2 lemon (optional)

Instructions
In a large bowl, gently combine the tuna, beans, and onions. TESTER TIP: If you find the flavor of red onion to be too strong, try soaking the sliced onion in cold water for a few minutes to soften the bite.
Add the salt, pepper, olive oil, and fresh parsley and gently toss.
Stir in the cherry tomatoes and lemon juice, if desired.
