Ingredients

8 ounces raw ground pork chorizo
1 pound 80/20 ground beef
1 teaspoon chili powder
1/2 teaspoon salt
2 teaspoons olive oil
2 whole poblano peppers
1 onion (halved and sliced)
2 cloves minced garlic
8 slices monterey jack cheese
4 hamburger buns
1 cup guacamole

Instructions

In a large skillet, cook 8 ounces raw ground pork chorizo until done, about 7 to 10 minutes, stirring regularly.

Transfer the cooked chorizo to a mixing bowl. Add in 1 pound 80/20 ground beef, 1 teaspoon chili powder, and 1/2 teaspoon salt. Knead gently to combine and form into 4 equally-sized patties. Set them

Peel, core, and slice 2 whole poblano peppers and slice 1 onion. Heat 2 teaspoons olive oil in a larget skillet over medium-high heat. Add in the sliced poblanos and onion and saute until tender, about 7 minutes. Add in 2 cloves minced garlic and cook an additional 60-90 seconds until garlic is fragrant. Set aside.

Meanwhile, heat a large heavy skillet over medium-high heat. Cook burgers for about 5 to 6 minutes per side

After flipping, top each patty with a slice of monterey jack, a heaping pile of the poblano mixture, and then another piece of cheese and allow to melt as the burger finishes cooking.

Toast 4 hamburger buns and serve hot topped with a scoop of guacamole.
