Orange Brown Sugar Glazed Ham

Ingredients

10 pounds fully cooked ham (like a bone-in spiral ham)
1/2 cup dark brown sugar
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1 tablespoon dijon mustard
1 teaspoon orange zest
1/2 cup orange juice

REHEAT THE HAM:

Preheat your oven to 325°F (or 160°C).

Place it facedown on a roasting rack and set onto a deep-sided roasting pan. If you're worried about sticking, you can always spray the rack first. Cover the ham with foil and bake for 90 minutes.

MAKE THE GLAZE:

In a bowl (or saucepan) measure and add dark brown sugar, garlic powder, onion powder and paprika, dijon mustard, orange zest and orange juice. Whisk well to combine.

Bring the glaze to a boil over hight heat, then immediately reduce to medium-low and simmer until it just starts to thicken. About 8 minutes. Set it aside until the ham is almost ready, it will thicken more as it cools.

Once the ham has baked, remove it from the oven and crank up the oven temperature to 425°F. Grab the glaze and use a silicon brush to slather 1/2 of the glaze over every visible inch.

Once the oven is at the new temperature, slide it back in for 10 minutes.Remove and brush with the rest of the glaze and slide the ham back into the oven for another 8 to 10 minutes.

Carefully remove the ham and transfer to a carving board. Cover with foil and let rest for 10 minutes. When ready to serve, take a knife (boning knife if you have it!) and run it along the bone and, then sliced and serve.
