Steak Bites

Ingredients

1 ½ pounds top sirloin steak (cubed 1-inch)
2 tablespoons olive oil (divided)
¾ teaspoon kosher salt
½ teaspoon freshly ground black pepper (or to taste)
½ teaspoon granulated garlic or garlic powder
½ teaspoon Italian seasoning
3 tablespoons butter
2 garlic cloves (minced)
1 tablespoon minced fresh parsley
Creamy horseradish sauce and/or steak sauce (for serving, optional)
cup sour cream
1 tablespoon cream-style horseradish (or to taste)

Instructions

In a medium bowl, toss the cubed steak with 1 tablespoon olive oil. Add the salt, pepper, granulated garlic (or garlic powder), and Italian seasoning. Toss the steak bites with the oil and spices until well coated.

In a large cast iron skillet, heat the remaining 1 tablespoon oil over MEDIUM-HIGH heat. Add the steak bites and spread them evenly across the bottom of the pan in a single layer. Cook for 2 minutes, undisturbed. Then, stir and continue to cook, stirring occasionally, until meat is browned on all sides, an additional 2 to 3 minutes. Ideally, they'll be browned/seared with a light pink interior. Transfer the steak bites to a plate and set aside.

Reduce the heat to MEDIUM and add the butter to the pan. After it melts, add the garlic and cook for 1 minute. Add the steak bites back to the pan and stir them into the garlic butter mixture. Remove from the heat and toss with the parsley.

Serve with the horseradish dipping sauce and/or steak sauce.

For the Creamy Horseradish Sauce

In a small bowl, combine the sour cream and horseradish, to taste.
