Corned Beef Hash

Ingredients

3 cups chopped cooked corn beef
3 to 4 large potatoes (peeled and cubed)
5 tablespoons cooking oil (I used olive oil)
1 medium onion (peeled and chopped)
3 cloves of garlic (peeled and diced or 3 teaspoons minced garlic)
1/2 teaspoon black pepper
1/2 teaspoon paprika (I used smoked paprika)
salt to taste
Parsley for garnish (fresh or dried)

Instructions

Heat oil in a skillet and cook potatoes and chopped onion for 20 to 25 minutes or until potatoes are soft.

Add cooked corned beef. Sprinkle on pepper, salt and paprika. Cook on low for 15 more minutes. Can garnish with parsley before serving.

Makes 6 to 8 servings.
