Sauteed Spinach with Pine Nuts and Feta Cheese

Ingredients

1 pound fresh baby spinach
2 tablespoons olive oil
2 cloves garlic (minced)
2 tablespoons pine nuts
¼ cup feta cheese (crumbled)
salt and pepper (to taste)

Instructions

Cook the Spinach in the Microwave

Wash the spinach under cold water, leaving it slightly damp.

Place it in a microwave-safe bowl, cover it with a safe plate, and microwave on high for 3 minutes.

Remove, transfer to a colander, and press to release water.

Chop roughly on a cutting board and press again in the colander to remove excess moisture.

Toast the Pine Nuts

Heat a large skillet over medium heat. Add the pine nuts and toast them for 2-3 minutes, stirring often, until golden and fragrant.

Remove them from the skillet and set aside.

Sauté the Garlic

In the same skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 30 seconds until fragrant.

Add the Spinach

Stir the prepared spinach into the skillet. Sauté for 2-3 minutes, mixing it with the garlic.

Finish with Pine Nuts and Feta

Stir in the toasted pine nuts and season with salt and pepper. Remove from heat and sprinkle with crumbled feta cheese.

Serve Immediately
