Turkey Burger Sliders

Ingredients

1 tablespoon olive oil
1 pound 93% lean ground turkey
½ cup yellow onion (finely chopped)
¼ cup BBQ sauce
2 teaspoons Dijon mustard
1 ½ teaspoons Kickin' Cajun Seasoning Mix (or a store-bought Cajun or Creole seasoning blend)
12 dinner rolls (brioche style or sweet Hawaiian)
cup mayonnaise (regular or light)
1 tablespoon Sriracha sauce (or to taste)
2 cups shredded cheese (divided (I used pepper Jack))
2 teaspoons melted butter
1 teaspoon everything bagel seasoning

Instructions

In a large nonstick skillet over MEDIUM heat, warm the oil. Add the ground turkey and onion and cook, breaking up the turkey into small pieces with a wooden spoon. Cook until the turkey is no longer pink, about 5 minutes. Pour off any excess grease from the skillet and return it to the heat. Add the BBQ sauce, Dijon mustard, and Cajun seasoning, and stir well to combine. Reduce the heat to LOW and cook, stirring occasionally, for a minute or two and then remove the pan from the heat and set it aside.

Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper. Use a serrated knife to separate the rolls and place the bottom halves of the rolls on the prepared baking sheet.

In a small bowl, combine the mayonnaise and Sriracha. Spread the cut sides of the bottom layer of the rolls with the Sriracha mayo, then sprinkle with half of the cheese in an even layer. Layer the meat mixture over the cheese and top with the remaining cheese. Cover with the top half of the rolls.

Brush the tops of the rolls all over with the melted butter and sprinkle evenly with the everything bagel seasoning. Bake until the cheese is melted and the tops of the rolls are golden and toasted, about 10 minutes. Remove from the oven and let the sliders rest for a couple of minutes, then pull them apart or slice them and serve warm.
