Sweet Potato Fries Recipe

2 small sweet potatoes (cut into fries, peeled or unpeeled)
2 tablespoons olive oil (or coconut oil)
2 tablespoons cornstartch
1 teaspoon sea salt
½ teaspoon smoked paprika
½ teaspoon garlic powder

Instructions
Prep the Sweet Potatoes:
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Peel the sweet potatoes (optional) and cut them into thin, even strips.
The Secret to Crispy Fries:
Soak the sweet potato strips in cold water for at least 30 minutes. This removes excess starch for a crispier fry.
Drain and pat them completely dry with a clean kitchen towel.
Season and Bake:
Toss the sweet potato strips with cornstarch until lightly coated.
Drizzle with olive oil and sprinkle with smoked paprika, garlic powder, salt, and optional spices. Toss to coat evenly.
Arrange fries in a single layer on the prepared baking sheet, ensuring they don't touch (use two sheets if needed).
Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
