Charcuterie Quesadillas

Ingredients

2 large flour tortillas
4 to 6 ounces charcuterie meat (about 1 cup chopped)
6 to 8 ounces assorted cheese
2 tablespoons finely chopped olives (optional)
1 tablespoon olive oil
honey for serving (optional)
fresh herbs for garnish (optional)

Instructions

Place the charcuterie meat on a large cutting board and chop into small pieces.

If the cheese is in large pieces, grate it with a cheese grater. If it is smaller pieces, finely chop it with a knife.

Heat a small skillet over medium high heat. Add the meat and cook until crisp while stirring, about 3 to 4 minutes.

On one half of the tortilla, add half of the cheese, half of the crisped meat and 1 tablespoon of olives if using. Fold the tortilla overtop and brush both sides lightly with olive oil. Repeat with the remaining ingredients.

Heat a large 12-inch skillet over medium heat. Place both quesadillas in the skillet and cook for 3 to 4 minutes, or until browned and crispy and the cheese has started to melt. Flip the quesadillas over and cook for an additional 2 to 3 minutes or until crisp.

Remove from the skillet and transfer to a cutting board. Cut into 3 triangles. Drizzle with honey and garnish with fresh herbs if desired.
