Fantasy Fudge

1 cup heavy cream
1/4 cup corn syrup
1/2 cup salted butter
1 teaspoon vanilla extract
2 cups mini marshmallows

Instructions
Lightly grease or line an 8x8-inch baking dish with parchment paper.
In a medium saucepan, whisk together 1 3/4 cups granulated sugar and 1/2 cup unsweetened cocoa powder until combined. Add 1 cup heavy cream and 1/4 cup corn syrup, then set the saucepan over medium heat. Stir constantly until the mixture just begins to boil.
Reduce the heat to low and let the mixture simmer, stirring occasionally, until it reaches 235238°F on a candy thermometer.
Remove the saucepan from the heat and allow the mixture to cool to at least 180°F. Once cooled, add 1/2 cup salted butter and 1 teaspoon vanilla extract. Stir for about 1 minute or until the butter is fully melted and incorporated.
Fold in the 2 cups mini marshmallows and 1 cup chopped walnuts until evenly distributed.
Transfer the fudge mixture into the prepared dish, spreading it evenly. Allow it to set completely at room temperature, about 23 hours.
Cut into pieces and serve. Store leftovers in an airtight container at room temperature.
