Ingredients

1 (4 to 6 pound) turkey breast (preferrably bone-in)
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon salt
1/2 teaspoon thyme
1/2 teaspoon black pepper
1/2 teaspoon white pepper
1/2 teaspoon cayenne pepper
3 tablespoons salted butter (sliced)

Instructions

Preheat the oven to 375°F (190°C). Place 1 (4 to 6 pound) turkey breast in a roasting dish or a 9x13-inch baking dish.

In a small bowl, combine 2 teaspoons paprika, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon dried oregano, 1 teaspoon dried basil, 1 teaspoon salt, 1/2 teaspoon thyme, 1/2 teaspoon black pepper, 1/2 teaspoon white pepper, and 1/2 teaspoon cayenne pepperuntil well mixed.

Rub the spice mixture evenly over the entire turkey breast.

Place the butter slices on top of the turkey breast and loosely cover the pan with aluminum foil.

Roast in the preheated oven for 80 to 120 minutes (about 20 minutes per pound). Remove the foil for the last 20 minutes of cooking to allow the skin to crisp. The turkey is done when it reaches an internal temperature of 165°F (74°C).

Remove the turkey from the oven and let it rest for 15 minutes before slicing. Serve warm.
