Smoked Gouda Mashed Potatoes

6 cups chicken broth
6 large russet potatoes (peeled and cut into bite-size pieces)
1/2 cup butter
4 ounces cream cheese
1 teaspoon salt
1/2 teaspoon white pepper
2 cups shredded smoked gouda cheese

Instructions
In a large pot, bring 6 cups chicken broth to a boil over high heat.
While waiting for the broth to boil, peel and rinse 6 large russet potatoes. Cut them into bite-size pieces.
Carefully add the potato pieces to the boiling chicken broth. If the broth doesn't fully cover the potatoes, add enough water to submerge them. Once the broth returns to a boil, reduce the heat to medium-low. Simmer for 10-15 minutes, or until the potatoes are soft and easily pierced with a fork.
Drain the potatoes and return them to the pot. Add 1/2 cup butter, 4 ounces cream cheese, 1 teaspoon salt, and 1/2 teaspoon white pepper. Mash the potatoes using a potato masher or hand mixer until smooth and all ingredients are fully combined.
Stir in 2 cups shredded smoked gouda cheese, mixing until the cheese is completely melted and integrated into the mashed potatoes.
Serve the mashed potatoes hot.
