Creamy Chicken Divan

2 cups stuffing (prepared according to package instructions)
2 cups frozen broccoli florets
2 cups shredded chicken (or cubed cooked chicken, about 2 lbs)
1/4 cup salted butter
1/4 cup all-purpose flour
2 cups chicken broth
1 cup heavy cream
1 cup sour cream
1/4 cup lemon juice (freshly squeezed)
1 tablespoon garlic powder
1 tablespoon whole grain mustard
2 teaspoons dried parsley
2 teaspoons onion powder
1 teaspoons salt
1 teaspoon black pepper
1 1/2 cups shredded cheddar cheese
1/2 cup mayonnaise
1 1/2 cups shredded cheddar cheese
2 cups crushed Ritz crackers
1/4 cup salted butter (melted)
2 teaspoons garlic powder

Instructions
For the Base
Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch pan or a 3 1/2-quart casserole dish with nonstick cooking spray.
Spread the prepared stuffing evenly across the bottom of the greased dish. Layer the broccoli florets on top, followed by the cooked chicken.
For the Sauce
In a medium saucepan, melt 1/4 cup salted butter over medium heat. Once melted, add 1/4 cup all-purpose flour and whisk continuously for 2-3 minutes, or until the mixture becomes smooth and turns a deep golden color.
Gradually pour in 2 cups chicken broth, 1 cup heavy cream, and 1 cup sour cream, whisking constantly until smooth and simmering (about 3-5 minutes).
Reduce heat to low and stir in 1/4 cup lemon juice, 1 tablespoon garlic powder, 1 tablespoon whole grain mustard, 2 teaspoons dried parsley, 2 teaspoons onion powder, 1 teaspoons salt, and 1 teaspoon black pepper. Continue stirring until fully combined.
Add 1 1/2 cups shredded cheddar cheeseto the sauce, stirring until melted and smooth. Remove from heat. Stir in 1/2 cup mayonnaise until the sauce is well combined.
Pour the sauce evenly over the chicken layer in the dish, making sure to cover all the ingredients.
For the Topping
Sprinkle the remaining 1 1/2 cups shredded cheddar cheese evenly over the sauce layer.
In a small bowl, combine 2 cups crushed Ritz crackers, 1/4 cup melted butter, and 2 teaspoons garlic powder. Stir until the cracker crumbs are fully coated with butter. Sprinkle the cracker mixture evenly over the top of the casserole.
Bake
Bake the casserole in the preheated oven for 40-45 minutes, or until the top is golden brown and the sauce is bubbly around the edges.
Remove from the oven and allow the casserole to cool for 5-10 minutes before serving. Enjoy hot!
