Garlic Fried Rice Recipe

Ingredients

3 tablespoons neutral oil (or butter)
12 cloves garlic (minced)
4 cups cooked rice (day old refrigerated rice works best)
¼ teaspoon salt
teaspoon fresh ground pepper
1 green onion (thinly sliced (for garnish))
4 large egss (optional)

Instructions

Sauté the Garlic: In a skillet or large wok heated over medium heat, add the oil and sauté the minced garlic until fragrant and golden brown, taking care not to burn it. Remove the crispy garlic and set it aside. You'll be using it later, so don't toss it. 

Add the Rice: Add the chilled rice to the garlic oil, breaking up any clumps and ensuring it is evenly coated with the aromatic garlic oil. Turn the heat to medium-high and stir-fry the rice until it's warmed. Spread the rice in an even layer in the pan and cook undisturbed for 3-5 minutes. This will give the rice a touch of crispiness.

Season the rice: Once the rice is a little crispy, season it with salt and a dash of freshly ground black pepper. Return the garlic chips to the rice. You can save some of the fried garlic to sprinkle on the top. 

Serve and Enjoy: Transfer the Garlic Fried Rice to a serving dish, garnish with the remaining garlic chips and a sprinkle of finely chopped green onions. If desired, serve the rice topped with fried eggs.
