Birthday Cake Ice Cream

Ingredients

funfetti cake mix
funfetti or confetti frosting
1½ cup heavy cream
1½ cup milk
1-1½ teaspoons vanilla
¼-½ teaspoon almond extract
⅔ cup sugar
⅛ teaspoon kosher salt
¼ cup rainbow sprinkles or jimmies

Instructions

Bake the cake in a 9x13 pan, according to the package instructions. (Feel free to bake a cake from scratch, if that makes you happier.) Stir the frosting and set aside. When the cake has cooled, frost the cake.

Whisk together the cream, milk, vanilla, sugar, and salt. Pour into your ice cream maker and freeze according to the manufacturer's directions.

While the ice cream is churning, slice the cake and freeze 3-4 servings worth of cake. Place the cake pieces in the freezer. When the ice cream is almost done churning, slice the frozen cake into 1-inch pieces.

When the ice cream finishes churning, scoop the ice cream into a freezer-safe airtight container, sprinkling cake pieces and sprinkles over each scoop. Freeze until firm.
