Cilantro Lime Chicken Pizza

Ingredients

2 16-inch prepared pizza crusts (unbaked)
2 cups fresh cilantro (loosely packed)
4 ounces canned green chiles
1/4 cup lime juice (about 2 limes)
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon salt
1 cup cooked chicken breast (diced or shredded)
4 cups shredded mozzarella
1 cup diced sweet onion (about 1 onion)

Instructions

Preheat oven to 500 degrees Fahrenheit and place 2 16-inch prepared pizza crusts onto pizza pans.

In a food processor or blender, combine 2 cups fresh cilantro, 4 ounces canned green chiles, 1/4 cup lime juice, 1/2 teaspoon ground cumin, 1/2 teaspoon chili powder, 1/4 teaspoon crushed red pepper flakes, and 1/4 teaspoon salt. Blend until smooth.

Divide the cilantro-lime sauce evenly and spread over the pizza crusts2 16-inch prepared pizza crusts

Add on 1 cup cooked chicken breast (diced or shredded), scattering out evenly over the pizza.

Sprinkle 4 cups shredded mozzarella evenly between the two pizzas to cover the chicken and prevent it from drying out. Then top with 1 cup diced sweet onion

Bake in the preheated oven for about 10-12 minutes, until the cheese is bubbling and lightly browned.
