Crispy Baked Zucchini Chips

1 pound (500g) zucchini (, about 1-2 medium zucchini)
2 eggs
1 cup (125g) flour
1 cup (140g) breadcrumbs
2 tbsp (25g) cornmeal
1 tsp oregano
1 tsp (5g) salt

Instructions
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper. Spray some oil over the parchment paper and set aside.
Cut the zucchini into ¼ inch (6mm) thick rounds. Sprinkle salt over the zucchini slices and let them sit for 5 minutes.
Meanwhile beat the eggs into a deep plate.
Add flour to another plate.
Combine breadcrumbs with cornmeal, salt and oregano into another plate.
Dredge each slice of zucchini in flour.
Dip it in the beaten egg.
Coat it with the breadcrumb mixture.
Place the zucchini slices in a single layer on the prepared baking sheet.
Spray the slices with olive oil.
Bake for 17-20 minutes until golden and crispy.
Serve immediately with Greek Tzatziki sauce or with your favorite dipping sauce.
