Juicy Dijon Grilled Pork Tenderloin

Ingredients

1 pork tenderloin (1 to 1 1/2 pounds)
2 tablespoons Dijon mustard
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon Italian seasoning

Instructions

Preheat an outdoor grill to high heat, about 450 to 500 degrees Fahrenheit.

Use a sharp knife trim 1 pork tenderloin of any excess fat and silver skin as desired. Place it on a cutting board and brush or spread 2 tablespoons Dijon mustard to coat the entire outside of the tenderloin.

In a small bowl, stir together 1 teaspoon salt, 1 teaspoon black pepper, and 1 teaspoon Italian seasoning. Sprinkle evenly over the tenderloin.

Place tenderloin directly on the grill. Close the lid and open it again to rotate the tenderloin every 2 to 3 minutes. If pork begins to blacken too much, place it over indirect heat to finish cooking.

Remove the pork tenderloin from the grill when it reaches an internal temperature of 145 degrees F, which should take about 15 minutes. Use a meat thermometer to ensure accuracy.

Let the pork rest on a clean cutting board, untented, for 10 minutes before slicing and serving.
